Collection: I Suoli - Sicily

 I Suoli is a winery from Etna that you might have never heard of; simply because the winery doesn't exist officially. 

I Suoli is a secret and fun project from the 3 Etna masterminds (Giuseppe Russo, Emiliano Falsni and Dante Pasqua) started up in 2015 with the desire to dare and find new natural horizons in the Etna wine scene.

Today they make around 3000 bottles of Etna Rosso. Expression of this unique terroir that makes wines with potential ageing of 20+ years. 

The trio is definitely not new to wine. If you know a bit about Etna, then you will also know the winery Girolamo Russo (Giuseppe) and Emiliano Falsini (enologist of the most acclaimed wineries on Etna and Tuscany).  

However, their fame is not what got me closer to I Suoli; even though all their experience and knowledge about Etna are playing a big role in the creation of these 2 astonishing wines.

Etna is a unique place in many ways. The vineyards are situated on the highly desirable “north slope” of Mount Etna, with a north-facing aspect and elevations that reach past 700 meters (Pignatone, San Lorenzo, Calderara Sottana). Soils are, obviously, volcanic—a black, sandy pumice—and the vines, never touched by phylloxera, are very old and trained in the alberello (“little bush”) method

The trio with I Suoli wanted to create wines that can reflect the Etna primordial and ethereal essence. With a minimum intervention in the cellar and some experiments that includes the use of 20 to 40 percent of grapes with whole bunches to research even more personality and elegance. Spontaneous fermentations (no yeast) in open vats. Ultimately, the wines are neither filtered nor clarified.
