The flor are nothing more than indigenous yeasts that develop in particular climatic conditions, in barrels or other containers that are voluntarily left empty and have the function of accompanying and protecting the liquid through a rather unique oxidation process.
The choice of the bizarre name (CCC - Come un Cane in Chiesa - As a dog in Church) is due to the emotions Daniele felt at the beginning of his experience as a winemaker.
This wine is iconic. From the single vineyards of San Leto, the nose reveals hints of candied orange, propolis, salty and smoky notes. At the palate is savory, mineral and earthy with slight tannic hints. To drink with your eyes closed!
